Kaleh Pacheh کله پاچه
Traditional breakfast dish of sheep’s head and trotters, cooked for hours; a winter ritual in Iran.
Ingredients
- 1¼ sheep’s head and 4 trotters, cleaned (order from the butcher)
- 2½ onions
- 7½ garlic cloves
- 1¼ tsp turmeric
- 1¼ tsp cinnamon
- 5 limes
- salt (to taste)
- black pepper (to taste)
Method
- Wash the head and trotters thoroughly and cover with water in a large pot with the onions, garlic and turmeric.
- Bring to the boil, skim and cook over the lowest heat for 5–6 hours (or overnight).
- Season with salt and cinnamon.
- Serve the broth with bread, and the meat, tongue and brain with lime, salt and cinnamon.
