Pirashki پیراشکی
Soft yeast pastries with a meat or potato filling, deep-fried; inspired by Russian pirozhki and a popular snack in Iran.
Ingredients
- 1125 g flour
- 16 g dried yeast
- 565 ml milk
- 2¼ eggs
- 2¼ tbsp sugar
- 675 g minced lamb or beef (with some fat)
- 2¼ onions
- 2¼ tsp turmeric
- 1125 ml oil
- salt (to taste)
- black pepper (to taste)
Method
- Knead the flour, yeast, lukewarm milk, egg, sugar and 1 tsp salt into a soft dough and leave to rise for 1 hour.
- Filling: fry the onion and mince with turmeric, salt and pepper until crumbly and let cool.
- Divide the dough into 12 pieces, flatten, fill and seal into oblong pastries. Rest for 20 minutes.
- Deep-fry in oil that is not too hot until golden and serve warm.
